The Best Allergy Friendly Gluten Free Vegan Bread #foodallergy #vegan #glutenfree #top8free #allergyfriendly

As my kids get older I find myself, and my kids wanting to try foods they can't have.  Just as much as they want it, I want to give them the opportunity.  With severe multiple food allergies, it hasn't been an easy diet to learn but it has been one I'm grateful for.  Over the years I have created so many snacks, meals and all for my kids that I don't really think they're missing out.  I just happen to bake and make everything they eat. 

Every once in a while I get an idea and get in the kitchen, and come out with a new amazing addition to our "menu."  This time it was bread.  This bread is wheat free, gluten free, egg free, dairy free, but free, fish free, soy free, and safe for anyone with the top allergens.  My son asked me the other day "what ever happened to sandwiches, I don't even remember how they taste."  When  he was much younger we bought the frozen gluten free bread a few times, and used to give him sandwiches.  Eventually I stopped buying them, because they were horrible.  I was grateful to have an option, but it didn't taste good.  It was impossible to thaw out, the only option was to toast it, and in the end it was like cardboard.  After that I made pan fried "bread," and made him quick sandwiches that way.  Never could I have dreamed of making soft bread for us all.  But the other day I just thought why not treat the gluten free flour mix as the "regular" all purpose flour, keep it allergy friendly (dairy, egg free etc.) like I always do and give it a go.  I recently learned of using Aquafaba (the brine from canned chickpeas) as an egg replacer, and thought I should just experiment with it also and see how it goes.

I am so happy I did.  Our lives have been changed with this bread.  My 7 year old said it is his wish come true to eat a sandwich as a family, and to have a toothpick with an olive holding his sandwich together.  It was our first time trying Namaste Foods Perfect Flour Blend gluten free flour mix, in fact I haven't tried using it in any other way yet, but it is delicious in this recipe.  The ingredients in it are: sweet brown rice flour, tapioca starch, brown rice flour, arrowroot powder, sorghum flour, xantham gum.   
What you'll need:
  • 9 x 5 loaf pan
  • 3 medium to large mixing bowls
  • Blender (but possible without*)
  • Apple Cider Vinegar
  • Olive oil
  • Salt
  • Active Dry Yeast (I used Red Star Active Dry Yeast 0.75 oz Packet)
  • Warm water (not comfortable for baby's bath warm, more like get the grease off the plate warm)
  • Gluten Free All Purpose Flour of your choice (I used Namaste Foods Gluten Free Perfect Flour Blend)
  • Aquafaba (liquid brine from canned chickpeas)
  • Sweetener of choice, I used honey (or maple syrup, sugar, brown sugar, agave sweetener etc.)
  • Double acting baking powder
Instructions:

  1. Lightly oil and dust the 9 x 5 loaf pan with flour - set aside.
  2. You'll need the yeast to start doing it's magic, so mix 1 1/2 cup of warm water4 tablespoons of honey (or sweetener of choice and 3 teaspoons of active dry yeast.  Set aside, covered (with plastic wrap) for about 5-10 minutes.  Wait until you see the froth forming on top.
  3. Mix 3 cups of the gluten free flour mix (I used Namaste Foods Perfect Flour Blend), 1 teaspoon of salt, 3 1/2 teaspoons of double acting baking powder- and set aside.
  4. Mix 3 teaspoons of apple cider vinegar, and 1/4 cup of olive oil.  Use blender to give it a good mix.  
  5. Then add the "eggs" to it (6 tablespoons of the liquid from canned chickpeas = aquafaba) Mix again with blender.
  6. Now pour the 2 wet ingredients into one bowl.  Give it a quick mix.
  7. In three parts, scoop in the dry ingredients into the wet.  Mixing every so often. 
  8. Place the mix into the prepared loaf pan and let rest for about 30 minutes.  Cover it lightly with plastic wrap.  It should rise.
  9. Once you've seen that it has almost doubled in size, place in preheated 375 degree oven for about 40 minutes.  (*don't worry if it doesn't rise as much, it will still taste really good)
  10. Let cool in pan for a few minutes, about 5 minutes or so.  Flip out into a cooling rack.  (I'm no pro baker so I just about never wait until it cools, so if you've got patience - wait, I heard that's what you're supposed to do before cutting in)
 Warm honey water with active dry yeast frothing up.
 Flour, salt, baking powder mix.
Olive oil, apple cider vinegar, and (egg replacer) aquafaba
 Mix of the two wet ingredients.
Dry mix ready.
 The wet and dry mix together.
Once the bread dough has sat and rose a bit, use wet fingers to shape flat or bumpy like this one.  It will keep it's shape and the crust will be the same way once fully baked. 
I never thought I'd have bread with my kids, I loved bread growing up, took it for granted then.  I wouldn't know the difference between this and a wheat bread.  There are many varieties of bread, and I'd just think this is one of them.  It has a tasty hard crust, and soft inside.  It has the texture of soft fresh baked wheat bread.  Very "glutinous" if you ask me, it might be the Namaste Foods flour mix, I have to try it out with another mix to see it comes out differently, it's just all I had at the moment.  This is the beginning and reminder to always experiment in the kitchen, no matter how impossible it may seem.  I can't wait to make different varieties of deliciousness with this.  Please let me know below if you try it!   I hope it brings you as much joy as it has our family!









What Makes You Happy?

So many things make me incredibly happy!  Things many people overlook and take for granted.  Things I took for granted all my life now make me happy.  I appreciate the smallest things, and the simplest things make my day and end up as the biggest accomplishment of my days. 
If you follow me on Instagram (d2dMOM) you'll see I share occasional food pictures during the week, and all of which makes me so happy.  It took me 6 years to learning how to cook and bake comfortably allergy friendly.  Besides the expensive hard to find ingredients, I don't find it such a challenge anymore to make food for my family free of wheat, rye, millet, oats, dairy, eggs, peanuts, tree nuts, shellfish, fish, garlic, and more.  It terrified me in the past, and I found it hard to omit so much I was used to eating everyday. 

Now my children grow up eating almost everything my husband and I grew up eating, just their own safer version.  That is something I smile about everyday.  I'm glad I learned how to cook when I was younger from my mom.  Learning the basics of cooking is so important, not measurements and exact recipes but just getting comfortable in the kitchen.  Knowing the basics has given me the ability to feel comfortable in adapting so many "recipes" over the years.  Every other day I surprise myself with dishes that are so good, you don't know they are "versions" of anything else but just good food.

Big Hero 6 -Baymax Themed Brunch #BigHero6 #FunLunchforKids #d2dKids

Not sure if you've heard but all the excitement for Big Hero 6 has returned again!  They won Best Animated Feature at the Oscars and is now available on Blu-Ray.  This movie has been one of our very favorites this year.  My son - for the first time, counted down the days to see it in theatres when it came out and still a fan of the motion picture.  So in celebration of the excitement, I made our brunch Big Hero 6 themed by having Baymax himself sitting in the bowl.
Rice and seaweed is all you need for your main centerpiece, Baymax. 
At this point you can add anything you want into the bowl and make the meal complete.  Great way to have rice on the side of any dish and make it extra fun for the kids.
We had some veggies and some bacon to complete our meal.  Make a meal look fun like this, and your kids will eat it all up!   



Easy "Beef and Brocolli" Recipe

This dish is top 7 allergen free.  (wheat, dairy, egg, peanut, tree nut, shellfish, fish)      
I've learned to cook as simple as possible over the past few years of my life because of food allergies.  Surprisingly it makes for tastier dishes where you actually taste what you are eating instead of added seasonings.  Less is more when it comes to cooking in the kitchen for me.  It also helps make shopping, and cooking easier.  I see so many people struggle with cooking allergy friendly, and I can't help but think it really isn't that difficult unless of course your list of allergens are unique and long.  I understand ours is always changing and difficult.  We don't eat out as a family, and we definitely don't order out Chinese food, so I created our own version of "Beef and Broccoli" for the whole family. 

All you need is:
Thinly sliced beef (or chicken) - about 2 cup fulls
Tons of broccoli rinsed and separated - twice or three times as much meat you use
1 onion cut up
Garlic - minced (we are allergic to garlic, so don't use it but if you can have it, it will add great flavor to this dish)
About 3 carrots - cut into strips
1/2 cup of olive oil
Half a teaspoon of sugar
1/4 a cup of soy sauce
(optional) add vegetables like mushrooms, or colorful bell peppers for added crunch, flavor, and vitamins

I don't measure when I cook, so hopefully my estimates here are good enough to help you out.  If you are comfortable in the kitchen, feel free to adjust accordingly to your instincts.  Also feel free to contact me, I'd be more than happy to help.

Place the oil, onions, *garlic, sugar, and soy sauce into the pot you will be cooking in.  Stir it all around until it is all mixed up.  Add your meat choice.  Let it marinade from 10 minutes to an hour in the fridge. -marinating is optional

Once done marinating, place it on the stove on high.  Let it heat up thoroughly, it will be well done fast so right before you see the beef turning completely brown (well done) add the vegetables like broccoli, carrots, bell peppers, and mushrooms.  Place the stove medium heat, cover for about 5 to 10 minutes.  The meat should be full of flavor, the vegetables perfectly coated with flavor but still with the crunch. 

Prepare your choice of plain rice/grain for the side to serve.  And enjoy. 



Cherrybrook Kitchen Sugar Cookie Mix #Review #GlutenFree #FoodAllergy

These would have to be my favorite allergy friendly cookie yet!  All I had to do was add in melted shortening, vanilla extract (which I didn't have and put orange oil extract), mix, and bake.  Cannot get any simpler than that when you are cooking without all the top allergens. 
 
It is crunchy and a bit chewy but not at all in a bad way.  I've made cookies from scratch, and due to my lack of following measurements precisely every time it comes out different and therefore harming the result every time!  When it comes to allergy friendly baking, it is like a science project with all the mixing and measuring but not with the Cherrybrook Kitchen Sugar Cookie Mix.

Why I love it:
It's simple ingredients.
It's simple instructions.
It is allergy friendly and doesn't call for eggs in the instructions. (Way too often it does, defeating the purpose of "egg free")
It tastes really good.
 
The ingredients are as follows:
White rice flour, evaporated cane juice, potato starch, tapioca flour, non-alluminated baking powder, xantham gum, sea salt.
 
Unfortunately my son had a reaction to something in them or the Earth Balance dairy free margarine we used.  Not sure which ingredient he reacted to, but I don't think it was a cross contamination since Cherrybrook Kitchen seems to be so good with labeling and awareness.  We will be looking into it further on our end. 
 
If your allergies aren't as many or as severe as ours, see if you can have these and give them a try.  If you have friends and family with allergies, these are a great alternative for parties or school that's safe for many.  
 
 
 
 

Antioxidant Full Smoothie featuring the Good Cook ProFreshionals Fresh Cut Fruit Bowl #FreshFruitBowl #BBBproduct #GoodCook

I received the Good Cook ProFreshionals Fresh Cut Fruit Bowl to try out and it inspired me to make a smoothie and use the big 3 piece bowl to hold the watermelon I didn't use right away.  I usually use a combination of fresh and frozen fruit, and I'm happy to share one of my go-to recipes that I have been enjoying everyday.  I love the bowl, and needed it more than I anticipated, check them out at your nearest Bed, Bath & Beyond.

You'll need a handful of the following:
Fresh Kale
Fresh Spinach
Fruits of your choice (I used frozen organic mix of blueberries, rasberries, strawberries, and cherries).
A fresh banana
And a cup full of freshly cut watermelon.
(optional and dependant on your blender) 1/2 cup of dairy free organic coconut milk.
  I blend all the fruits first.
 A handful of spinach and kale
 I add the spinach and kale on top and blend until I don't see it anymore. (other than slight change in color - depending on how much greens you put in)
 
My blender isn't that great compared to the higher quality blenders like Vitamix, and Blendtec so I end up having to shake or stir to get it all blended.  If you are in the same situation and but don't like your smoothies really frozen and thick like I prefer, feel free to add 1/2 a cup of coconut milk or more watermelon.
Sometimes having a whole plate for lunch weighs me down and leaves me with no energy so I turn to quick healthy smoothies like this to replace my breakfast or lunch.  I love the ProFreshionals Fresh Cut Fruit Bowl so much, more than I thought I would.  I bought a huge watermelon and was able to cut up a whole half of it and place it in the bowl without worrying about it spoiling overnight.  It has a top layer with holes that drains out the liquid that drips out of the watermelon overtime to the bottom bowl, and has a lid to help with keeping any fruit you store in the bowl fresher longer.  The kids and I love snacking on watermelon throughout the day and we all seem to like how convenient it is.  We finished a huge watermelon in 2 days, that has never happened before!  It totally had to do with fresh cut watermelon ready to eat, and none of it was soggy or had the flavor of the whole fridge - which happens without the bowl.  

Even thought there are a handful of greens in the smoothie, it doesn't taste like it at all!  Give it a try, and adjust it as you prefer.

 

Meat & Veggie Bowls with Mashed Potatoes {Good Cook Bake-A-Bowl #Giveaway} #foodallergy #goodcookcom

Check out the new Good Cook Sweet Creations Bake-A-Bowl two piece mold trays and imagine the possibilities!  The possibilities are truly endless, you could make appetizers, entrees to deserts in the same pan but please not at the same time...  I had lots of fun with the trays, and ended up with a delicious allergy friendly melt in your mouth hardy dinner for my family.
I made an allergy friendly meat & veggie bowl with mashed potatoes scooped on top made inside the new Good Cook Sweet Creations Bake-A-Bowl two piece baking mold tray.  I've made meatloaf inside of cupcake trays and topped it off with mashed potatoes as frosting before but once I saw there was a chance to make a bowl I thought it would be great since my family loves this meal.  It is just a hardy and delicious meal no one can say no to.  I fill mine with lots of vegetables, almost any and every vegetable in the fridge to make it healthier for everyone.  They were perfectly portioned since the meatloaf shrinks about half it's size once baked.  I used half vegetables and half organic ground beef.  They are melt in you mouth good, probably because of the vegetables.  And to think I used to get headaches over not being able to use bread crumbs and all the other random ingredients I used to use before my sons food allergies came into factor.
I don't measure anything when I cook so here's what I used, and hopefully you'll be able to adjust accordingly to how much you need and what you desire.  When I look for inspiration online, I always look at ingredients used to get ideas so hopefully this will help you!
Simple allergy friendly ingredients and instructions:
*Organic ground beef.
*Minced onions.
*Shredded carrots.   
*Cabbage cut up real small.
*Tons of mushrooms cut up real small.
*Red, orange, yellow peppers cut up real small.
Salt & Pepper to taste.
Mix it all up, and mold into the bowl.  Fill the bowl as much as you can specially if you use lots of vegetables like I did - since it will shrink up.  Place the second piece of the mold to create the bowl, and bake about 40 minutes in the oven on 350.
 
For the mashed potatoes..it is really simple.  You boil up the peeled & sliced potatoes, drain once it breaks with a poke.  Leave a bit of the hot starchy water, add salt & pepper to taste.  Add a few drops of extra virgin olive oil and use a potato masher to mash it all. 
*Optional alternative is to use dairy free butter or buttery spread, and dairy free milk but honestly after many trials we've all agreed we like it the simple way.  It's less store bought ingredients used, and when you have severe food allergies it's just no need if you prefer the other way anyway.

You will have shrunken up bowls with lots of juices still in the center.  I loved the two piece mold, not only for it's shape but for acting like a perfect cover making sure nothing dried up.  Lots of juices will be left, you can use it to drizzle over like a gravy. 
Serve right away.  Top with your favorite salad mix, rice, quinoa, or mashed potatoes like we did.  These are pretty small in size so all that I mentioned can be right on the side of one perfect meat/veggie bowl.

Homemade Chocolate Bars with Pink Marshmallow Filling #foodallergy #‎goodcookcom‬ ‪#‎goodcookkitchenexprt‬

Allergen free milk chocolate filled with pink marshmallows.

All made possible by the Good Cook Spring Silicone Chocolate and Bark mold.  

Seriously adorable, and easy to make. 

I melted top allergen free chocolate chips in the microwave for about a minute long, stirring halfway. 
It should look like this. 
Spread the melted chocolate with the adorable spring spatula, find it on the Good Cooks spring tools section.  
We look for the allergen friendly marshmallows, and have had luck with Kraft marshmallows before.  According to the ingredients it should be safe for most top allergens.  To go along with the spring theme, I chose the pink marshmallows.  Although after trying it out, I do recommend the original white marshmallows instead.  If you want color, just use some natural food coloring instead.  The flavor and consistency was just not the same.  
While the chocolate hardened up in the freezer.  I melted the marshmallows in the microwave as well.  I spread the marshmallow filling over the hardened chocolate.  
I took more melted chocolate and spread it out all over the top.  Then topped with allergen free rice crispy cereal.  *I would recommend putting the layer of cereal under the chocolate and over the marshmallow layers, the chocolate hardened up too fast and the cereal didn't stick too well.  The cereal gives extra crunch, and balances out the sweet in the chocolate and marshmallow filling.  It should taste like a fun version of smores.   
When you have food allergies it's hard to find treats that are safe, and even harder to find treats that look and taste good.  I'm glad to find products like this and share them with you all that make it fun and easy for everyone.
