Cart full of frozen vegetables! |
Did you know that March is Frozen Food Month? I didn't, but once I found out it was, I thought of celebrating by making a family meal with frozen vegetables as the main ingredient. I went shopping at our nearest A&P Supermarket for the first time to go check out their frozen food section, you can check out my
photo story on google+. I was able to make a veggie stir fry (with beef) and a side of wild brown rice. To continue the frozen food theme of our meal, I also made us all fruit smoothies for dessert with frozen strawberries as the main ingredient.

Want to "celebrate" with me? If you want to make what I made here, I've made it really easy for you to do just that! :)
You will need:
-Your favorite collection of frozen vegetables; I used cauliflower, broccoli, spinach, peas, and corn (~1/2 cup of each)
-I also used fresh vegetables (3) mushrooms, (2) carrots, and (4) brussels sprouts
-Olive oil (1/4 of a cup)
-Your choice of meat (I used beef) thinly sliced
-Your favorite rice, noodles, or pasta on the side.
-Pepper (to your liking, just sprinkle on)
-Soy Sauce (about 3-4 tablespoons-You will need less if you aren't using any meat)
-Sugar or honey (1/2 a teaspoon)
If you know me at all, you know I like good and simple. The dish came out delicious, and I'm excited to share it with you all with tons of pictures! :)

Let frozen vegetables defrost for about a half an hour... |

..or else you will have a frozen block which is hard to make stir fry with :) |

Pour the oil into a small bowl... |

..add the soy sauce and sugar/honey |

..add thinly sliced beef/meat of your choice to marinade. |

Fresh carrots thinly sliced, and mushrooms chopped to your liking... |

Lots of frozen vegetables thawed and ready... |

Stir fry fresh ingredients, starting w brussels sprouts... |

..add in all the vegetables, (except for 1 carrot) and stir fry for about 7 min... |

..add in the meat with half the marinade sauce in the middle, mix and stir fry again... |

Place cover, and cook for about 5 min. (medium low heat) |

Once everything is all cooked, add in 1 sliced carrot on top and mix. (that keeps them slightly cooked & crunchy as well as adding more color) |

For dessert, as I mentioned we enjoyed smoothies. I made with frozen strawberries, a fresh banana, and some orange juice. If you try this yourself, I'd love to hear about it! :) Happy Frozen Food Month, hope you still eat healthy and colorful while "celebrating"
